Hands down, my favorite appetizer of all time!

These Cheesy Tortilla Corn Bites are a perfect appetizer or snack, featuring crispy Tostitos Scoops filled with a creamy, spicy mixture of jalapeño pepper jack cheese, cream cheese, and sweet corn, then baked until bubbly.

Ingredients:

Tostitos Scoops tortilla chips1 bag
Cream cheese, softened1 cup
Shredded jalapeño pepperjack cheese1 cup
Corn kernels (fresh, frozen and thawed, or canned and drained)1 cup
Egg, beaten1

How To Make Cheesy Tortilla Corn Bites:

  1. Step 1: Preheat and Combine Filling: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the softened cream cheese, shredded jalapeño pepperjack cheese, corn kernels, and the beaten egg. Mix well until thoroughly combined and creamy.
  2. Step 2: Prepare Chips: Arrange the Tostitos Scoops tortilla chips on a baking sheet lined with parchment paper.
  3. Step 3: Fill and Bake: Spoon a small amount of the cheese and corn mixture into each tortilla chip, being careful not to overfill. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the chips are slightly golden.
  4. Step 4: Serve: Remove from the oven and allow to cool for a few minutes. Serve warm and enjoy!
